Rosella Jam Recipe

The Rosella Hibiscus sabdariffa likes a full sun position and will grow to a approx 1 mtr high.  It has a Hibiscus like flower and showy red fruit.

Pick the Rosella fruit when dark red and about 3 to 4cm long, peel off the outer fruit petals for use and remove the seeds.

Place the washed fruit petals in the blender, and blend roughly and just cover with water.

Bring to the boil, remove green seed pods and add equal amount of sugar.

1 ltr of the boiled Rosella plus juice of 1 lemon, and half a green apple (grated) cook for about 15 minutes to make the jam.
